  1. Do Piaza means "onions twice". This could refer to the 2 methods of preparing the onions for this dish, or the sheer quantity. Either way it is a delicious winter warmer

  2. 2kg beef shin, boned

  3. 4 large brown onions, peeled

  4. vegetable oil

  5. 1 cinnamon stick

  6. 1 teaspoon cardomom pods

  7. teaspoon cloves

  8. 5 garlic cloves, crushed

  9. 6cm piece ginger, grated

  10. 2 teaspoons cumin seeds, crushed

  11. 1 tablespoon coriander seeds, crushed

  12. 1 teaspoon fenugreek seeds

  13. teaspoon ground turmeric

  14. cup plain yogurt

  15. 2 cups (500ml) water

  16. 2 long green chillies, chopped finely, or 1/2 teaspoon cayenne

  17. 1 teaspoon sea salt

  18. teaspoon garam masala

  1. Prepare beef by chopping into large 4cm pieces removing most of the fat or sinew as you do so.

  2. Thinly slice 3 of the onions and cook in 2 tablespoons oil until very tender and browned; remove from pan, set aside. Dice remaining onion; set aside.

  3. Add beef in batches and cook until browned all over. Remove beef from pan and add to the onions.

  4. Add remaining oil and add whole spices, cook 30 seconds or until fragrant. To the same pan add the diced onion, garlic and ginger and cook until softened. Add crushed spices, fenugreek and tumeric and stir to combine.

  5. Reduce heat to medium, add yogurt a spoonful at a time, stirring to combine as you do so. Once all the yogurt is added, return meat and onions to the pan with any of their juices, the water, the chopped chillies or cayenne and the salt.

  6. Stir to combine and bring to a gentle simmer. Partially cover and simmer until beef is tender – anywhere from 2 to 2½ hours.

  7. Add the garam masala and stir through. Check seasoning.

  8. Serve with cardamom spiced rice or naan bread.
