  1. 10 fresh wonton skins

  2. 1 egg, whole, for egg wash

  3. 120g Alaskan king crab meat, cleaned weight

  4. 1 tbsp chopped shallots

  5. 1 tbsp chopped chives

  6. 1 tbsp ginger juice

  7. 25ml olive oil

  8. 75ml raw clam juice from fresh raw clams

  9. 75ml corn stock made from used/empty ears of corn

  10. 75ml onion puree, made from roasted onions

  11. 2 tsp fennel puree, made from boiled fennel bulbs

  12. 2 tsp garlic puree, made from peeled garlic cloves

  13. 2 tsp basa gede oil (see basa gede recipe)

  14. 75 ml coconut milk

  15. Salt and pepper to taste

  16. 1 tsp fresh coriander leaves, sliced thinly

  17. 1 tsp fresh Vietnamese coriander/mint, sliced thinly

  18. Lemon juice, from fresh lemons to taste

  19. Ginger juice, from fresh ginger, grated, to taste

  20. 5 sprigs fresh Vietnamese coriander/mint tips, for garnish

  1. Crab Filling Mix all ingredients together, adjust seasoning, divide up and make ravioli with stuffing and wonton skins.
