  1. 2 sweet potatoes , peeled and chopped finely

  2. 236 1/29 ml dried red lentils

  3. 14.79 ml olive oil

  4. 3 shallots

  5. 29 1/28 ml curry powder

  6. 3 garlic cloves , crushed

  7. 14.79 ml grated ginger

  8. salt and pepper

  9. 1182.95 ml vegetable broth

  10. chopped cilantro , lime juice

  1. heat olive oil over medium heat.

  2. optional- if you want the sweet potato soft, microwave for 2-3 min 3 add shallots and cook until soft.

  3. add ginger and garlic and saute for 1-2 minute.

  4. add curry powder and mix thoroughly.

  5. add sweet potatoes, lentils, and broth.

  6. bring to a boil then simmer at least 45 minute.

  7. the longer this simmers the better! before serving increase heat to high and stir in the cilantro and lime juice.
