  1. 2 2 lbs. ground beef (grass fed angus is the best)

  2. 1 lb spicy sausages (hot Italian, Southwestern, etc.)

  3. 6-8 oz marinated mozzarella cheese , grated

  4. 1 onion chopped

  5. 1 T. crushed garlic

  6. 12 oz Italian style bread crumbs

  7. 4 oz sun dried tomatoes in olive oil , chopped

  8. 1 T. dried basil

  9. 1 T. (plus) dried oregano

  10. 1 t. fennel seeds

  11. 2 T. olive oil

  12. 2 eggs

  13. 1 12 oz jar marinara sauce (you can experiment with different versions and brands)

  14. 1 cup sweet marsala wine

  15. hot sauce

  16. creamed horseradish

  17. ketchup

  1. Preheat oven to 375 degrees Saute the onion in oil until soft.

  2. Cut the sausages in half and remove the meat from the casings and crumble. Add to the ground beef in a large mixing bowl. Add the onions, bread crumbs, sun dried tomatoes, and spices. Blend in the eggs and then 2/3 of the marinara sauce. Then the Marsala.

  3. Divide the mixture into 2 long oval loaves and place them on an oiled piece of aluminum foil on a cookie sheet.

  4. Pour the remaining marinara sauce on top and dust with more oregano, salt and fresh ground black pepper.

  5. Bake for 45 minutes to an hour, until the temperature in the center reached 150-160 degrees.

  6. Allow to stand for 15 minutes before slicing into thick tranches Serve with hot sauce, creamed horseradish, and ketchup for the kids.

  7. Serves 8-10
