  1. 1 large onion , chopped

  2. 2 garlic cloves , chopped

  3. 2 tbsp curry powder

  4. 1 large sweet potato , peeled and cut into small chunks

  5. 4 skinless boneless chicken breast fillets , cut into chunks

  6. 400g tin coconut milk

  7. 100g whole cherry tomatoes

  8. fresh coriander , to serve

  1. Cook the onion and garlic in a tsp of oil for 5 minutes. Season, then stir in the curry powder. Cook for another minute, then add the potatoes and chicken.

  2. Pour in the coconut milk. Simmer for 10-12 minutes, then add the tomatoes and simmer for 2 minutes.

  3. Serve sprinkled with fresh coriander.
