  1. 1 cup rock salt

  2. 2-3 small chat potatoes per person depending on appetite

  3. To fill potatoes, a selection of the following:

  4. Grated tasty cheese

  5. Guacamole

  6. Baked beans

  7. Diced ham

  8. Roasted capsicum strips

  9. Sour cream mixed with chopped chives

  10. Creamed corn

  11. Tuna mayonnaise

  12. Bolognaise sauce

  13. Crispy bacon

  1. Preheat oven to 180C or 160C fan-forced.

  2. Place a layer of rock salt in the base of a roasting tin. Pierce each potato with a skewer or the tip of a sharp knife. Place on salt and transfer to preheated oven. Bake 25 minutes or until potatoes are tender.

  3. Transfer potatoes to serving plates and get an adult to cut a deep cross in the centre of each potato. Push four corners of potato together so insides fluff up and out!

  4. Top with your favourite filling; grill if desired to melt cheese.
