  1. 1 package Simply Organic Cocoa Cayenne Cupcake Mix

  2. powdered egg replacer equivalent to two eggs

  3. 1/2 cup water

  4. 1 tablespoon soy butter

  1. Preheat oven to 350 degrees. Grease 12-count cupcake pan or use paper inserts.

  2. In a large bowl, combine Cupcake Mix, egg replacer, water and butter. Stir until just moist.

  3. Pour into cupcake pan. Bake for 25 to 30 minutes, until center tests done with a toothpick or knife.
