  1. 4 flour tortillas

  2. 2tbsp olive oil

  3. 2 skinless chicken breasts, cut into strips

  4. 2tbsp hot chilli powder

  5. 1 onion, halved and sliced

  6. 1 red pepper, sliced

  7. 100g green beans

  8. 400g tin of chopped tomatoes

  9. A handful of coriander, chopped

  10. Soured cream or guacamole, to serve

  1. Heat olive oil in a large pan.

  2. Fry the chicken and quickly brown all over.

  3. Add the chilli powder and cook for 1 min.

  4. Transfer the chicken onto a plate and in the same pan cook the onion and red pepper until softened.

  5. Add the green beans, tomatoes and the chicken, cover and simmer for 15 mins.

  6. Stir in the coriander and roll in warm tortillas.

  7. Serve with sour cream and guacamole.
