  1. 1 boneless 3-1/2 pound chuck roast

  2. 6 cloves garlic, cut into slivers

  3. 2 onions, chopped

  4. 1 cup barbecue sauce

  5. 2 tablespoons tomato paste

  6. 1/2 cup water

  7. 1 teaspoon salt

  8. 1/4 teaspoon pepper

  9. 1/4 cup lemon juice

  10. 1/2 cup ketchup

  11. 3 tablespoons brown sugar

  12. 3 tablespoons grainy mustard

  13. 1 tablespoon horseradish

  14. 1 tablespoon Worcestershire sauce

  1. Cut holes in the roast and put garlic slivers into the holes. Place onions in a 5-quart slow cooker and place meat on top.

  2. In medium saucepan, combine remaining ingredients and bring to a simmer. Pour over the roast. Cover and cook on low for 8-10 hours or until roast is very tender. Remove meat, cover to keep warm, and set aside.

  3. Thicken the gravy by pouring it into a large saucepan. Boil hard until thickened, tasting and adding salt as needed. Serve with roast.
