  1. IDLY batter - 1 bowl

  2. Water (little to dilute)

  3. For stuffing:

  4. Carrot - 2 nos

  5. Beans - 6 nos

  6. Potato - 1 no

  7. Green peas - 1/4 cup

  8. Onion (big) - 1 no

  9. Cooking oil - 1tbsp

  10. Turmeric powder - a pinch

  11. Salt as per taste

  12. Red chilly powder - 1/2 tsp

  13. Garam masala - 1/4 tsp

  14. To grind:

  15. Cinnamon - 1piece(1inch)

  16. Cloves - 1 no

  17. Fennel seeds - 1/8 tsp

  18. Grated coconut - 1 tbsp

  19. Dalia (Fried gram dal) - 1tsp

  20. Ginger - 1 piece (small piece)

  21. garlic - 6 cloves (or GG paste - 1 / 4 tsp)

  22. To garnish:

  23. Coriander leaves (a few)

  24. Lime juice as per taste

  1. Heat a kadai with a tbsp of oil and add the onion pieces.

  2. Saute till it turns transparent.

  3. Now add the ground masala paste.

  4. Saute till the raw smell disappears.

  5. Then add the cooked vegetables and the powders.

  6. Mix well for few mins.

  7. Add the required water and boil well till the stuffing thickens.

  8. Finally add the lime juice and garnish with coriander leaves.

  9. In an idly pot, pour a tbsp of batter and keep a tsp of filling in the center.

  10. Then pour another tbsp of batter to cover the filling.

  11. Steam for 15 mins.

  12. Insert a fork, if it comes out clean, the idly is done.

  13. Serve hot with sambhar ,coconut chutney or tomato chutney !!

  14. Note:

  15. U can make the above version in chinese style by adding cabbage , little soya sauce , ajinomotto and white pepper powder.But avoid using garam masala pwd, red chilly powder and ground masala paste..Hope u all know this. Sometimes i make like this too.

  16. If u dont want to stuff the idly, just mix the above stuffing in the batter directly and make idlies.It tastes good in that way too.. Smile While making for kids , add a tsp of ghee over the stuffing in each idly .that gives an additional flavor..
