  1. 2 teaspoons fennel seeds

  2. 1 teaspoon sea salt

  3. teaspoon cracked black pepper

  4. 2 tablespoons olive oil

  5. 4 x 200g veal chops

  6. 4 (320g) flat mushrooms

  7. 80g butter, softened

  8. 1 tablespoon coarsely chopped fresh flat-leaf parsley

  9. 1 clove garlic, crushed

  10. 1 tablespoon wholegrain mustard

  11. 80g baby rocket leaves

  1. Using a mortar and pestle, crush combined seeds, salt and pepper coarsely; stir in oil. Rub mixture over veal.

  2. Cook veal and mushrooms on heated oiled grill plate (or grill or barbecue)

  3. until browned both sides and cooked as desired.

  4. Meanwhile, combine butter, parsley, garlic and mustard in a small bowl.

  5. Divide rocket among serving plates; top each with mushroom, veal, then butter.

  6. Butter mixture suitable to freeze. Not suitable to microwave.
