  1. 2 lb Okra, fresh or thawed

  2. 4 tb Vegetable oil

  3. 1 Onion, medium and minced

  4. 4 Garlic cloves, chopped

  5. 1/2 ts Cumin seed

  6. 2 Green chilies, chopped

  7. 1/4 c Coriander leaves-fresh/chopd

  8. 1/4 ts Turmeric

  9. 16 oz Stewed tomatoes (1 can=8 oz)

  10. 2 tb Vinegar

  11. 1/2 c Water

  12. 1 tb Black pepper, ground

  13. 1 pn Salt

  1. Wipe okra gently with moist kitchen towel.

  2. Cut each into 4 pieces and set aside.

  3. Heat vegetable oil in a skillet.

  4. Add onions, garlic, cumin seed, chilies (optional), and coriander leaves.

  5. Saute 4 to 5 mins.

  6. Add turmeric.

  7. Stir once or twice.

  8. Add tomatoes, vinegar and 1/2 cup water.

  9. Bring to a boil.

  10. Lower heat and simmer 15 mins.

  11. Add okra, black pepper and salt.

  12. Cover and cook until okra is tender, about 20 mins.
