  1. 6 Artichokes hearts - cleaned, quartered

  2. 1 cup 237ml Lemon juice

  3. 2 tablespoons 30ml Kosher salt

  4. 1 tablespoon 15ml Freshly-ground black pepper

  5. 1 Bay leaf

  6. 2 tablespoons 30ml Finely-chopped thyme

  7. 1 tablespoon 15ml Minced garlic

  8. 4 oz 113g White wine

  9. 2 cups 474ml Extra-virgin olive oil

  10. Chopped parsley - for garnish

  1. Preheat oven to 350 degrees.

  2. Mix the artichokes and all other ingredients except chopped parsley into a medium bowl. Toss together and put into a Dutch oven. Bring to a boil on top of the stove, cover with aluminum foil and place in the oven. Cook until soft, about 1 hour. Serve sprinkled with parsley.

  3. This recipe yields 4 to 6 servings.
