  3. 13 Ounce can evaporated skim milk

  4. 1 egg or egg substitute equal to one egg

  5. 2 egg whites

  6. 1/2 cup biscuit mix - bisquick now makes low-fat version

  7. 2 tablespoon sugar

  8. 8 package sugar substitute

  9. 2 teaspoon pumpkin pie spice

  10. 2 teaspoon vanilla extract

  1. Heat oven to 350 degrees F. Lightly grease a 9 inch pie plate - or spray with Pam. Place all ingredients in blender, food processor, or large mixing bowl. Blend 1 minute or beat 2 minutes with mixer. Pour into pie pan and bake for 50 minutes or until center is puffed up.
