  1. 400 g bamboo shoots

  2. 2 tsp oil

  3. 1 heaped tsp very finely chopped garlic

  4. 10 dried black mushrooms, soaked

  5. 1 tsp Chinese rice wine

  6. 1 tsp chicken stock powder

  7. 1 tsp sugar

  8. 1/2 tsp salt

  1. If using fresh bamboo shoots, peel off the outer layer, then slice coarsely. If using canned bamboo shoots, simmer in boiling water for 5 minutes, drain and slice coarsely.

  2. Heat oil in a wok and stir fry the garlic and mushrooms until fragrant.

  3. Add the bamboo shoots and all seasonings and stir fry for 1-2 minutes.

  4. Serve immediately.
