  1. Dough

  2. 2/3 cup 157ml Milk

  3. 1 tablespoon 15ml Honey

  4. 1 Egg

  5. 3 tablespoons 45ml Butter

  6. 3 cups 187g / 6.6oz Bread flour

  7. 3/4 teaspoon 3.8ml Salt

  8. 2 teaspoons 10ml Bread machine yeast

  9. Filling

  10. 2/3 cup 61g / 2 1/5oz Pine nuts, almonds, or walnuts

  11. 1/2 cup 73g / 2.6oz Grated parmesan cheese

  12. 1/3 cup 48g / 1.7oz Chopped parsley

  13. 3 tablespoons 45ml Butter - melted

  14. Wash

  15. 1 Egg white

  16. 1 tablespoon 15ml Water

  1. Place all dough ingredients in your machine in the order recommended by your machine's manufacturer. Select the Dough cycle and press start. When cycle is complete, remove dough from machine and punch down. Cover and let rest for 10 minutes.

  2. Meanwhile, for filling, in a small mixing bowl stir together the pine nuts or almonds or walnuts, parmesan cheese, and parsley. Set aside.

  3. Grease baking sheets. Divide dough in half. On a lightly floured surface, roll half of the dough into a 12 1/3- by 12-inch rectangle. Brush with half of the melted butter; sprinkle with half of the filling. Starting from a long side, roll up jelly-roll style; seal edge. Cut into nine 1 1/2-inch thick slices. Place them on the baking sheet seam-side down. Let rest 5 minutes. Using a wooden spoon handle, press center of each slice lengthwise to make a deep crease. Repeat with remaining dough, butter and filling.

  4. In a small mixing bowl combine egg white and water. Brush mixture on to the tops of the rolls. Let rolls rise in a warm place for 30 minutes or until almost doubled. Bake in a 375 degree oven for about 15 minutes or until golden brown. Serve Warm.

  5. This recipe yields 18 rolls.
