  1. 1 Salmon fillet (large)

  2. 1 Cucumber - chopped

  3. 1 Apple - chopped

  4. 1 Tomato - chopped

  5. 2 tablespoons 30ml Apple cider vinegar

  6. 1 teaspoon 5ml Dried tarragon

  7. 1 tablespoon 15ml Olive oil

  8. White Bean Relish

  9. 1 lb 454g / 16oz White navy beans (Northern bean)

  10. 2 tablespoons 30ml Olive oil

  11. 1 Green onions - white part minced,

  12. Chive (green) part cut in 1" pieces

  13. 1 tablespoon 15ml Minced garlic

  14. 1 cup 110g / 3.9oz Chopped celery

  15. 1 Red bell pepper - chopped

  16. 1 Green pepper - chopped

  17. 3 Plum or Italian tomatoes - chopped

  18. 1 teaspoon 5ml Paprika

  19. 1 teaspoon 5ml Garlic salt

  20. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  21. Red pepper - to taste

  22. 1 teaspoon 5ml Oregano

  23. 1 teaspoon 5ml Thyme

  24. 1/3 cup 48g / 1.7oz Coarsely-chopped fresh parsley

  1. Place salmon fillet on bamboo steamer rack. Place rack in wok over boiling water. Cover and steam for 10 to 12 minutes or until it flakes easily with a fork. Mix remaining ingredients together in a small bowl. When salmon is done, remove to a serving platter and top with relish.

  2. For the White Bean Relish: Combine all ingredients and let chill one hour.
