  1. 2 lemons , zest and juice

  2. handfuls flat leaf parsley

  3. 4 cloves garlic , crushed

  4. 100 g breadcrumbs

  5. 2 tbsp olive oil

  6. 4 small squid

  7. 3 tbsp olive oil

  8. 3 banana shallots , diced

  9. 250 g cherry tomatoes , chopped

  10. 150 ml white wine

  11. dried red chilli flakes , to taste

  12. black pepper

  1. To make the gremolata, combine the lemon zest and juice with the parsley, garlic and breadcrumbs. Stuff the squid with the gremolata mixture.

  2. Heat the oil in a frying pan over a moderate heat, and fry the squid for 2 minutes.

  3. To make the sauce, heat the oil in a saucepan and fry the shallots over a gentle heat until softened.

  4. Add the cherry tomatoes and white wine and sprinkle in chilli to taste. Cook for 4 minutes, season with salt and pepper and serve.

  5. Pour the sauce over the squid and serve.
