  1. Dipping Sauce:

  2. 6 Tablespoons soy sauce

  3. 6 Tablespoons hoisin sauce

  4. 4 teaspoons honey

  5. 2 teaspoons Chinese chili sauce (available in Asian markets)

  6. 2 teaspoons minced garlic

  7. Marinade:

  8. 3 Tablespoons soy sauce

  9. 3 Tablespoons Oriental sesame oil

  10. 3 Tablespoons hoisin sauce

  11. 3 Tablespoons dry sherry

  12. 1 Tablespoon minced garlic

  13. 1 Tablespoon minced peeled fresh ginger

  14. 1 shallot, finely chopped

  15. 1/2 teaspoon salt

  16. 6 thick (1-1/2 inches) center-cut loin pork chops

  17. (about 4-1/2 pounds)

  18. 2 Tablespoons honey

  19. 2 Tablespoons Oriental sesame oil

  1. Prepare the dipping sauce by combining soy sauce , hoisin sauce, honey , chili sauce, and minced garlic in a medium bowl. Divide among 6 little bowls and set aside.

  2. For the marinade , combine the soy sauce, sesame oil, hoisin sauce, sherry , garlic, ginger , shallot , and salt in a large bowl. Add the pork chops and toss to coat completely. Let rest covered at room temperature for 2 hours, turning a few times.

  3. Combine the honey and sesame oil in a small bowl. Place 2 nonstick skillets, large enough to hold 3 pork chops each, over medium heat. Brown the chops lightly, 5 minutes per side basting with the honey mixture. Reduce the heat to medium-low, cover, and cook, turning the chops after 8 minutes, until the chops are cooked through, about 15 minutes.

  4. Serve each chop with a little bowl of dipping sauce.
