  1. 1/2 c Uncooked rice

  2. 2 c Boiling water

  3. 2 c Milk

  4. 3 Egg yolks

  5. 1/3 c Granulated sugar

  6. 1 ts Vanilla

  7. 3 Egg whites, stiffly beaten

  8. 4 tb Sugar

  1. Cook rice in rapidly boiling salted water.

  2. Drain and place in strainer over heat until rice is dry fluffy.

  3. Make a custard of the milk, egg yolks, sugar and vanilla.

  4. Pour over rice which had been places in a buttered baking dish.

  5. Drop spoonfuls of strawberry jam over the surface and then cover with meringue which has been made by adding the 4 tbsp.

  6. of sugar to the beaten egg whites.

  7. Sprinkle with coconut.

  8. Bake in a slow oven at 315 F.

  9. for 20 minutes.

  10. Serve hot or cold.

  11. Serves 8.
