  1. 1 1/2 tablespoons olive oil

  2. 1/2 cup chopped onion

  3. 2 teaspoons finely chopped garlic

  4. 1/2 teaspoon salt

  5. 1/4 teaspoon ground black pepper

  6. 1 pound assorted mushrooms, trimmed and sliced

  1. In a large skillet, over medium-high heat, heat oil until hot. Add onion; cook and stir until tender, about 3 minutes. Add garlic, salt, pepper and mushrooms (except if using oysters); cook and stir until lightly browned and moisture evaporates, about 5 to 7 minutes. Add oyster mushrooms, if using, cook until barely softened, about 1 minute.
