  1. 2 qts. fresh green and/or yellow beans--cut into 2" pieces

  2. 1 lrg. onion--finely diced

  3. 4 Tbsp margarine

  4. 3 Tbsp AP flour

  5. 2 c water

  6. 10 small red potatoes--diced

  7. 2 c milk

  8. 1 lrg. can of chicken stock--more as needed

  9. 2 chicken or vegetable bouillon cubes

  10. 2 Tbsp lemon juice

  11. salt and pepper

  12. 1 Tbsp. No salt all purpose seasoning blend

  13. 1/4 c dried parsley

  14. 1 heaping tsp. minced garlic

  15. 2 c sour cream

  1. Saute onion in margarine until onion is translucent, but not brown.

  2. Add flour and stir, coating all onions and continue to cook for 1 min.

  3. Slowly add 2 c water, stirring constantly and bring to boil.

  4. Add beans, potatoes, milk, stock, bouillon, lemon juice, seasoning, parsley and garlic.

  5. Add more stock to cover, as needed.

  6. Salt and pepper to taste.

  7. Cook for 1 hour on medium or until beans and potatoes are fork tender.

  8. Take soup pot off heat and stir in sour cream well.

  9. Serve with a hearty dark bread.

  10. May easily be halved or doubled.
