  1. 2 1/2 lbs 1135g / 40oz Russet potatoes - peeled, and cut into large pieces

  2. 4 Garlic cloves - peeled

  3. 1 cup 146g / 5.1oz Grated sharp white Cheddar cheese

  4. 1/2 cup 118ml Milk or cream

  5. 2 tablespoons 30ml Chopped canned Chipotle chilies in adobo s

  6. 2 tablespoons 30ml Butter

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. Boil potatoes and garlic in large pot of salted water until potatoes are very tender, about 20 minutes. Drain. Return to pot. Mash with potato masher. Immediately add cheese, milk, chilies and butter and mash until smooth and cheese is melted. Season to taste with salt and pepper.
