  1. 1 1/2 c Sugar

  2. 2 c Whipping cream

  3. 2 c Milk

  4. 1 c Unsweetened pineapple juice

  5. 1 c Light corn syrup

  6. 2 c Mint leaves; crush finely

  7. crushed finely 1 c Fresh pineapple;

  8. 1 1/2 c Water

  9. 1/4 c Creme de menthe

  1. Combine sugar and sater; cook and stir till mixture boils.

  2. Cook to soft ball stage (235~).

  3. Add mint leaves; cook about 10 minutes longer.

  4. Remove from heat; strain.

  5. Add corn syrup; let cool.

  6. Add remaining ingredients; freeze in hand-turned or electric ice cream freezer.

  7. Let ripen.

  8. Makes 2 quarts.
