  1. 2 cups quick-cooking oats

  2. 1/3 cup packed brown sugar

  3. 1 1/2 teaspoons baking powder

  4. 1/2 teaspoon salt

  5. 1/2 teaspoon ground cinnamon

  6. 1 cup Smart Balance Fat Free Skim Milk

  7. 2 eggs

  8. 2 tablespoons Smart Balance oil

  9. 1 teaspoon vanilla extract

  1. In a large bowl, combine the oats, brown sugar, baking powder, salt, and cinnamon.

  2. In a separate bowl combine the milk, eggs, oil, and vanilla. Add to the oatmeal mixture and stir well.

  3. Let oatmeal mixture sit for 5 minutes.

  4. Pour the mixture into an 8 inch square pan spayed with cooking spray.

  5. Bake for 30 minutes or until knife inserted in the center comes out clean.

  6. Serve plain, with milk, or with syrup drizzled on top.
