  1. 3 eggplant s, peeled and diced

  2. 1 penne pasta

  3. Italian spices ( basil , oregano, thyme)

  4. 16 oz. can of diced tomato es

  5. 2 T tomato paste

  6. 4 garlic cloves, minced

  7. 1/2 mozzarella , shredded

  8. Parmesan cheese

  9. EVOO

  1. Preheat oven to 350°.

  2. Oil a baking dish lightly with EVOO.

  3. Brown the eggplant in EVOO and drain.

  4. Cook pasta according to package, drain and toss with tomatoes, spices, garlic, tomato paste and if dry, add a bit of the pasta water.

  5. Layer eggplant, pasta and mozzarella in dish.

  6. Sprinkle with Parmesan and bake uncovered until golden.
