  2. 1/2 cup corn -- (thawed or frozen)

  4. 1/4 cup nonfat milk

  5. 1 1/2 teaspoons melted low-calorie margarine

  6. 1 tablespoon flour

  7. 2 teaspoons sugar

  8. 1/8 teaspoon paprika

  9. fresh ground pepper -- to taste

  1. Preheat the oven to 375 degrees. Spray a medium ramekin baking dish or small casserole dish with nonstick cooking spray. (You can also use 2 muffin compartments of a muffin tin, but fill the remaining compartments with water before baking.)

  2. Combine all the ingredients in a small bowl and pour into the prepared dish. Bake for 30 minutes or until the pudding does not shake when moved and is lightly brown on top.
