  1. 2 pears, peeled, cored and grated

  2. 1 pear, peeled, cored and mashed

  3. 1 egg, lightly beaten

  4. 1 egg white, lightly beaten

  5. 2 tablespoons water

  6. 1 teaspoon vanilla extract

  7. 200g plain flour

  8. 200g caster sugar

  9. 4 tablespoons instant vanilla dessert mix, such as Angel Delight

  10. 1 1/2 teaspoons cinnamon

  11. 1/2 teaspoon bicarbonate of soda

  12. 1/4 teaspoon salt

  13. 1/8 teaspoon baking powder

  1. Preheat oven to 170 C / Gas 3. Lightly grease a 13x23cm loaf tin.

  2. In a bowl, mix the grated pears, mashed pear, egg, egg white, water and vanilla. In a separate bowl, mix the flour, sugar, dessert mix, cinnamon, bicarbonate of soda, salt and baking powder. Stir the pear mixture into the flour mixture just until moistened. Transfer to the prepared loaf tin.

  3. Bake 1 hour in the preheated oven or until a knife inserted in the centre comes out clean.
