  1. 2 cups 320g / 11oz Basmati rice

  2. 1 cup 237ml Vegetables steamed -

  3. Peas - beans, carrots, cauliflower

  4. 2 Size onions chopped (medium)

  5. 2 tablespoons 30ml Raisins

  6. 2 tablespoons 30ml Cashew nuts or slivered

  7. Almonds

  8. 2 teaspoons 10ml Salt

  9. 1 teaspoon 5ml Turmeric powder

  10. 1 teaspoon 5ml Cinnamon powder

  11. 1/4 teaspoon 1 1/3ml Clove powder

  12. 1/4 teaspoon 1 1/3ml Nutmeg powder

  13. 1/4 teaspoon 1 1/3ml Chile powder

  14. 1/4 teaspoon 1 1/3ml Coriander powder

  15. 3 tablespoons 45ml Butter

  1. Soak the basmati rice in water for 30 min and drain well. Melt 1 1/2 T butter in a skillet and saute' the onions and raisins and cashew nuts till they turn golden brown. Keep aside. Melt rest of the butter in the skillet and add basmati rice and fry till they don't stick together. Add all the spices and mix well. Preheat the oven to 375F.

  2. Empty the basmati rice into a baking pan. Add salt and 1 1/2 cup of water. Cook for 20 min or until the rice is done. Add the vegetables, onions, raisins and cashew nuts to rice and mix well.
