  1. 1 teaspoon vegetable oil

  2. 1 tablespoon minced fresh gingerroot

  3. 2 garlic cloves, minced

  4. 5 cups low sodium vegetable broth

  5. 8 ounces fresh portobello mushrooms, sliced

  6. 1-1/2 tablespoons rice vinegar

  7. 2 teaspoons sesame oil

  8. Pinch salt, to taste

  9. 2 tablespoons chopped green onion

  1. Asian Mushroom Soup Recipe photo by dLife® In a wok or medium saucepan, heat vegetable oil over medium high.

  2. Add ginger and garlic. Stir fry 30 seconds.

  3. Lower heat to medium. Add mushrooms. Stir fry 2 minutes.

  4. Add broth. Bring to boil. Reduce heat, cover and simmer 10 minutes.

  5. Add rice wine and sesame oil. Stir well. Season to taste with salt.

  6. Garnish with green onions. Serve.
