  1. 2lbs jumbo shrimp , peeled and deveined

  2. 1 large bell pepper , diced

  3. 2 scallions , diced

  4. 3 stalks celery , diced

  5. 2 cloves garlic , minced

  6. 14 oz can diced tomatoes (with chipotle, if possible)

  7. 1T adobo seasoning , if tomatoes aren't chipotle

  8. 1t Mexican oregano

  9. 1/2-2g Cajun or creole seasoning

  10. kosher or sea salt and fresh ground black pepper

  11. 1 cup half and half or heavy cream

  12. 4 cups cooked wild rice

  1. Saute celery, pepper, shallot and garlic over medium heat until beginning to soften, about 10 minutes.

  2. Add shrimp and cook just until turning pink.

  3. Remove shrimp and set aside Add tomatoes, adobo sauce, oregano, Cajun seasoning and salt and pepper and increase heat.

  4. Cook at a high simmer about 10-12 minutes, until liquid is nearly all reduced.

  5. Add shrimp and cream and heat to warm through, finish cooking shrimp, and thicken slightly.

  6. Serve over wild rice with lemon or lime wedges and fresh cilantro, if desired.
