  1. for each pocket:

  2. 1/2 pound butter; softened

  3. 2/3 cup sugar

  4. 2 egg whites

  5. 4 cups flour

  6. Blackberry jam

  1. Preheat oven to 325 degrees. Spray a cookie sheet with nonstick oil.

  2. With an electric mixer beat the butter until creamy. Then begin to beat in sugar a little at a time until you've combined it all.

  3. Add the egg whites and flour and continue to bead until all ingredients are incorporated into the mix.

  4. Roll the dough into 1-inch balls and flatten slightly with your palm. Press your thumb print in each cookie.

  5. Bake for about 12 minutes, allow to cool. Spoon blackberry jam into the indent of each cookie.

  6. Makes: 3 1/2 dozen.
