  1. 4 c Water

  2. 1 1/2 lb Boneless chicken breast, cut -into 1 inch strips

  3. SAUCE

  4. 2 tb Peanut oil

  5. 2 ts Finely chopped fresh ginger

  6. 4 Garlic cloves, minced

  7. 1 tb Grated lemon peel

  8. 1 tb Grated orange peel

  9. 1/2 c Fresh lemon juice

  10. 1/2 c Fresh orange juice

  11. 2 tb Sugar

  12. 2 tb Soy sauce

  13. 5 ts Cornstarch, mixed with

  14. -tbsp water

  15. 1 tb Sesame oil

  16. 2 tb Thinly sliced green onions

  17. -(garnish)

  1. In a medium saucepan heat water until boiling; immerse chicken pieces for 2 minutes; remove chicken; keep warm.

  2. Heat oil in wok over medium heat; add ginger and garlic; stir fry 30 seconds.

  3. Add remaining sauce ingredients; bring to a boil; simmer for 1-2 minutes or until thickened.

  4. Add chicken pieces; cook 3 more minutes or until chicken is cooked throough.

  5. Sprinkle with green onions and serve at once.

  6. Makes 4 servings.
