  1. For the Filling:

  2. 1kg.

  3. Tamarind paste 1 tsp.

  4. Vinegar 1 tbsp.

  5. 1/4 tsp.

  6. Turmeric powder 1/2 tsp

  7. Sugar 2 tsp.

  8. Salt to taste.

  9. For the pastry:

  10. Plain flour 2 cups

  11. Butter 3/4 cup

  12. (Ice cold) water 2 tbsp.

  13. Salt a pinch.

  1. In a deep sauce pan place the pork, tamarind paste, vinegar, green chillies, clove powder, turmeric powder, sugar and salt. Add 2 cups of water and cook until the mixture is completely dry, keep stirring often. Remove from heat and keep aside.

  2. Sieve the plain flour and salt in a large bowl and rub in the butter with fingertips, until it resembles bread crumbs.Sprinkle ice cold water, mix well and gather the dough in a ball.

  3. Lightly flour a rolling pin and board and roll out the dough to 1/8 thickness. Cut into circles to fit small greased pie dishes.

  4. Fill with pork meat, cover with pastry and bake in a hot oven for12 to 15 minutes.
