  1. 1 cup flour

  2. 3/4 cup blue cornmeal (yellow corn meal can be substituted)

  3. 1/3 cup sugar

  4. 3 teaspoons baking powder

  5. 3/4 teaspoon salt

  6. 1 cup buttermilk

  7. 1 egg , beaten

  8. 2 tablespoons melted butter or 2 tablespoons margarine

  9. 2 tablespoons bacon bits

  10. 2 jalapenos, stems and seeds removed, chopped (can add more if you like the muffins with extra heat)

  1. Preheat oven to 425°F.

  2. Grease muffin tins.

  3. Mix together dry ingredients (flour- salt).

  4. Combine the rest of the ingredients in large bowl (buttermilk - jalapeños).

  5. Stir in dry ingredients.

  6. Pour into muffin tins.

  7. Bake for 20-25 minutes.
