  1. 1 tablespoon cornstarch

  2. 2 cups grated sharp cheddar cheese

  3. 3/4 cup milk

  4. 1 teaspoon dry mustard

  5. 1 egg, well beaten

  6. 8 crepes

  7. 1/4 cup bacon bits or 8 strips bacon,cooked and crumbled

  8. 1 tomato, chopped

  1. Directions In mixing bowl combine cornstarch and cheese.

  2. Add milk and mustard.

  3. Heat until cheese melts.

  4. Stir often.

  5. Add a small amount of hot mixture to egg; return to hot mixture.

  6. Cook and stir over low heat until mixture thickens and is creamy.

  7. In shallow baking pan, fill crepes with bacon bits and half of the rarebit sauce; fold crepes over.

  8. Pour remaining sauce over all and top with tomatoes.

  9. Broil until sauce is bubbly.
