  1. 4 Catfish fillets - (8 oz ea)

  2. 1 cup 237ml Milk

  3. 1/8 teaspoon 0.6ml Salt

  4. 1/8 teaspoon 0.6ml Freshly-ground black pepper

  5. 1/8 teaspoon 0.6ml Paprika

  6. Vegetable oil

  7. Hush Puppies

  8. 1 cup 62g / 2 1/5oz Cornmeal

  9. 2 tablespoons 30ml Baking powder

  10. 1/2 teaspoon 2 1/2ml Salt

  11. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  12. 1/8 teaspoon 0.6ml Freshly-ground white pepper

  13. 1/3 cup 20g / 0.7oz Minced onion

  14. 1 Egg - beaten

  15. 1/4 cup 59ml Milk

  1. Rinse and pat catfish dry. In a shallow dish, mix together milk, salt, pepper, and paprika. Dip pieces of fish in milk mixture. Roll fish in cornmeal and set pieces on waxed paper to dry.

  2. Heat 1 1/2 inches of vegetable oil to 350 degrees. Deep-fry fish, turning once, until golden brown. Drain on paper towels and keep warm.

  3. Hush Puppies: Mix cornmeal with baking powder, salt, pepper, and onion. Mix egg with milk and whisk into cornmeal.

  4. Spoon hush puppies into hot oil and fry until golden brown.

  5. This recipe yields 4 servings.
