  1. 1 granny smith apple (peeled and cubed)

  2. 1 tablespoon lemon juice

  3. 1 small banana , sliced

  4. 1 tablespoon walnuts , chopped

  5. 1/2 cup quick oats

  6. 1 cup vanilla-flavored soymilk (I use 8th continent light vanilla)

  7. 1/4 teaspoon ground cinnamon

  1. Mix cubed apple with lemon juice and 1/4 tsp cinnamon, making sure apple is covered evenly.

  2. Cover, and microwave on high for 3 minutes.

  3. Remove from microwave and add sliced banana.

  4. Put aside.

  5. In separate bowl combine oatmeal, soymilk, and the other 1/4 tsp cinnamon.

  6. Mix well and microwave on high for 3 minutes.

  7. Combine apple, banana mixture with oatmeal. Add chopped walnuts.

  8. Enjoy.
