  1. 2 cups 125g / 4.4oz Flour

  2. 1 1/4 cups 247g / 8.7oz Sugar

  3. 1 1/2 teaspoons 7 1/2ml Cinnamon

  4. 1 1/4 teaspoons 6 1/3ml Baking soda

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/4 teaspoon 1 1/3ml Ground cloves

  7. 1/4 teaspoon 1 1/3ml Ground nutmeg

  8. 1/2 cup 80g / 2.8oz Raisins

  9. 1/2 cup 99g / 3 1/2oz Nonfat egg substitute equal to

  10. 2 eggs

  11. 1/2 cup 118ml Unsweetened applesauce

  12. 1/3 cup 78ml Nonfat milk

  13. 1 teaspoon 5ml Vanilla extract

  14. 2 cups 292g / 10oz Chopped peeled apples - seeNote

  15. 1/4 cup 40g / 1.4oz Light brown sugar - (packed)

  16. 1/4 cup 36g / 1 1/3oz Chopped walnuts

  1. * Note: Use your favorite apples, which add moisture to the cake. Jonagold are preferred, but Granny Smith, Jonathans and Golden Delicious work well also.

  2. Heat the oven to 350 degrees. Lightly butter an 8-inch square baking pan.

  3. Sift together the flour, sugar, cinnamon, baking soda, salt, cloves and nutmeg into a large mixing bowl. Stir to blend. Stir in the raisins.

  4. Combine the egg substitute, applesauce, nonfat milk and vanilla and stir into the dry ingredients just until blended. Fold in the apples. Spoon the batter into the prepared pan.

  5. Combine the brown sugar and walnuts and sprinkle evenly over the top of the cake.

  6. Bake the cake until a toothpick inserted in center of cake comes out clean, 50 to 60 minutes. Cool to warm, then cut into serving pieces.

  7. This recipe yields 9 servings.
