  1. 1 1/4 cups all-purpose flour

  2. 1/4 tsp baking soda

  3. 1/8 tsp salt

  4. 1/4 cup butter, softened

  5. 2/3 cup sugar

  6. 1 egg white

  7. 1 tsp vanilla extract

  1. Combine flour, baking soda and salt in a small bowl.

  2. In a large bowl, beat butter and sugar together with an electric mixer until well blended. Add egg white and vanilla and beat until well combined.

  3. Gradually stir in flour mixture with a wooden spoon or spatula.

  4. Gather dough in a ball and on a piece of wax paper form the dough into a 6-inch log. Wrap and place in the freezer for 3 hours.

  5. When ready to bake cookies, preheat oven to 350 degrees. Line a large cookie sheet with parchment paper or silicone mat. Remove cookie dough from freezer and slice into 1/4-inch rounds. Sprinkle with seasonal sugars if you like. Place 1-inch apart on cookie sheet.

  6. Bake for 8-10 minutes until lightly golden.
