  1. 1 1/2 - 2 lbs. cut up beef stew meat

  2. 1/2 C flour

  3. 1 tbsp Montreal steak seasoning

  4. 1 medium yellow onion , coarsely chopped

  5. 2 tbsp vegetable oil

  6. 2 C beef broth

  7. 1 C water (if needed)

  8. 2 - 4 garlic cloves, minced

  9. 1 C carrot s, sliced (about 2 large carrots)

  10. 2 C potato es, diced (about 2 medium sized potatoes, skinned)

  11. 1/2 C celery , sliced (about 2 stalks)

  12. 1/2 C sliced pepper s - yellow and red

  13. 1/2 C frozen pea s

  14. 1/2 tsp ground thyme

  15. 1 bay leaf

  16. 1 tsp black pepper

  17. 1 tsp salt (to taste)

  1. Heat 1T vegetable oil in a large pot. Add onions and cook onions until lightly browned. Remove onions from pot. Add remaining vegetable oil and continue to keep pot hot.

  2. Pour flour and Montreal steak seasoning into a large plastic bag. Add beef cubes and shake bag to thoroughly coat meat with flour and seasonings. Add floured beef cubes in small batches to hot oil in a large pot; stir and lightly brown beef cubes. When all beef cubes are lightly browned add the remaining flour from the bag and the recently browned onions and stir well. Then add the beef broth, water, vegetables and spices. Cover and using low heat continue to slow cook mixture for 30-40 minutes, stirring occasionally and add water if the mixture gets too thick.
