  1. Smart Balance Omega Non Stick Spray

  2. 15 slices of pineapple (you will need 2 cans)

  3. 15 maraschino cherries

  4. 1 stick Smart Balance Omega-

  5. 3 Buttery Sticks

  6. 2 1/2 cups brown sugar, divided

  7. 3 cups flour

  8. 1 cup sugar

  9. 1 teaspoon baking soda

  10. 1/2 teaspoon salt

  11. 3 grade A large eggs, beaten

  12. 3/4 cup Smart Balance Omega Oil

  13. 1 teaspoon vanilla extract

  14. 2 tbsp rum

  15. 3/4 cup Smart Balance Fat Free Milk

  1. Spray a glass 9x13 pan with the non stick spray. Preheat oven to 325.

  2. In the pan, arrange the pineapple slices with the cherry in the middle.

  3. In a small saucepan, melt the butter and 1 ½ cups of brown sugar over medium heat until just bubbling. Pour evenly over top of the pineapples.

  4. In a mixing bowl, stir together flour, sugar, remaining 1 cup of brown sugar, baking soda, and salt.

  5. Add the eggs, oil, vanilla, rum and milk and stir by hand just until ingredients are moistened.

  6. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a wooden pick inserted comes clean.

  7. Cool the cake in the pan for 5 minutes, and then invert on to a serving plate.
