  2. 1 small onion

  3. 1/4 cup red wine vinegar

  4. 1 Tbsp olive oil

  5. 1 Tbsp Dijon mustard

  6. 1 tsp dried chopped rosemary

  7. 2 cloves garic, cut into thin slivers

  8. 1/2 tsp salt

  9. 1 (3 1/2 pound) chicken, skin removed (I used thighs)

  10. 1.Preheat oven to

  11. 400 F. Spray a

  12. 9x13" baking pan with nonstick spray.

  13. 2.Combine onion, vinegar, oil, mustard, rosemary, garlic, and salt in a small bowl.

  14. 3.Place chicken in the baking dish. Spoon the onion mixture on top of chicken. Bake until chicken is browned and cooked through (do not turn), about 45 minutes.
