  2. 3 tbsp. vegetable oil

  3. 8 cloves garlic, crushed

  4. 3/4 pound boneless, skinless, chicken breast, cut crosswise into 1/2" slices

  5. 1/2 pound mushrooms, sliced

  6. 1 small onion, sliced

  7. 4 scallions, including the green tops, angle cut into 1" pieces, bulbs cut in half lengthwise

  8. 1 red jalapeno pepper or red serrano chilie

  9. 1 tbsp. soy sauce

  10. 2 tbsp. Thai fish sauce

  11. 2 tbsp. rice vinegar

  12. 2 tbsp. sugar

  13. 1/3 cup finely chopped, peeled fresh ginger

  14. 1 minute. Add the mushrooms and stir fry for 1 min. Add all the remaining ingredients and stir fry just until the chicken and vegetables are cooked through about 4-5 minutes.

  15. Serve over rice.
