  1. 1 1/2 to 2 lbs. whole fish (red snapper, trout, pike or perch)

  2. Salt

  3. 1/4 cup butter or margarine

  4. 1/3 cup diced onion

  5. 1/3 cup diced celery

  6. 1/4 cup dry bread crumbs

  7. 1 egg, beaten

  8. 1 tablespoon lemon juice

  9. 1 teaspoon salt

  10. 1/8 teaspoon black pepper

  1. Place cleaned and gutted fish in a 12x8x2 inch glass baking dish.

  2. Sprinkle cavity with salt.

  3. Set aside.

  4. Place butter, onion and celery in a 1 qt.glass casserole dish.

  5. Cover and Microwave 2 to 3 minutes or until tender.

  6. Stir in remaining ingredients except fish.

  7. Lightly stuff fish with dressing.

  8. Secure with toothpicks.

  9. Cover head and tail with small pieces of aluminum foil pressed firmly to fish.

  10. Cover dish with plastic wrap.

  11. Microwave 5 to 9 minutes, giving dish a 1/4 turn during cooking.

  12. Let stand, covered, 3 minutes before serving.

  13. Garnish with lemon slices, parsley and pimiento.
