  1. Ingredients :Serves 4

  2. 500 g 1/4 teaspoon 1/2 teaspoon 100 g 1 2 1/2 cm 1/2 2 tablespoons 1 tablespoon 2 1 teaspoon 250 ml Sea bass, cleaned

  3. Salt

  4. Ground white pepper

  5. Pork, thinly sliced

  6. Spring onion (scallion), cut into 2 1/2 cm lengths

  7. Ginger knob, peeled and julienned

  8. Onion, peeled and sliced

  9. Preserved soy beans

  10. Light soy sauce

  11. Red chilies, julienned

  12. Sugar

  13. Water or stock

  1. Make diagonal cuts on both sides of fish.

  2. Marinate with salt and 1/4 teaspoonpepper. Leave for 15 minutes.

  3. Mix pork with spring onion, ginger, onion,preserved soy beans, light soy sauce, chilies, sugar, remaining pepperand water or stock. Place on top of fish.

  4. Steam for 15 minutes or until fish iscooked.

  5. Serve hot with steamed rice.
