  1. 1-3 oz. pkg. cream cheese , softened

  2. 5 eggs , divided

  3. 1/4 cup milk

  4. 1/2 tsp. pepper

  5. 1/8 tsp. salt

  6. 2 tbls. chives , chopped

  7. 1 tbls. butter

  8. 1/2 cup Monterey Jack or pepper Jack, shredded

  9. 3 slices bacon , cooked and crumbled

  1. Beat cream cheese until smooth

  2. Add 2 eggs and beat until smooth

  3. Add remaining eggs, milk, pepper and salt and beat until blended

  4. Stir in chives

  5. In large skillet, melt butter over medium low heat

  6. Add egg mixture and cook without stirring until eggs begin to set on bottom

  7. Drag a spatula across bottom of pan to form large curds of egg

  8. Add cheese and bacon

  9. Continue cooking until cheese melts and eggs are firm but still moist
