  1. Salad:

  2. 1 medium carrot, julienned

  3. 1 tomato, chopped

  4. 227 g salami, julienned

  5. 114 g provolone cheese, julienned

  6. 1 1/2 cups sliced mushrooms

  7. 1/2 cup sliced black olives

  8. 24 canned artichoke quarters, drained

  9. 4 large peperoncini, sliced into thin rings

  10. 6 cups mixed salad greens

  11. Dressing:

  12. 1/4 cup balsamic vinegar

  13. 1 tsp. minced garlic

  14. 1/2 tsp. dry oregano

  15. 1/2 tsp. dry basil

  16. 1/2 tsp. salt

  17. 1/2 tsp. pepper

  18. 1/2 cup olive oil

  1. For Salad:

  2. Gently toss together carrot, tomato, salami, provolone, mushrooms, olives, artichokes, peperoncini and greens. Pour dressing over and toss to coat.

  3. For dressing:

  4. Whisk together vinegar, garlic, oregano, basil, salt and pepper. Slowly whisk in oil to emulsify.
