  1. 1 (16 oz.) can pumpkin

  2. 3/4 c. sugar

  3. 1 tsp. ground cinnamon

  4. 1/2 tsp. ground ginger

  5. 1/2 tsp. ground nutmeg

  6. 3 eggs

  7. 1 (5 1/2 oz. can) -

  8. 2/3 c. evaporated milk

  9. 1/2 c. milk

  10. 1 unbaked pie crust

  1. In large mixing bowl combine pumpkin, sugar, cinnamon, ginger, nutmeg and 1/2 teaspoon salt. Add eggs; with a fork, lightly beat eggs into pumpkin mixture. Add the evaporated milk and milk; mix well. Place a pastry-lined 9 inch pie plate on oven rack, pour in pumpkin mixture. Cover edge of pie with foil. Bake in a 375 degree oven for 25 minutes. Remove foil; bake for 25-30 minutes more or until a knife comes out clean. Cool. Cover and chill to store. Serves 8.
