  1. 2 1/2 cups oat bran

  2. 1/4 cup raisins

  3. 1 tablespoon baking powder

  4. 1/2 teaspoon salt

  5. 3/4 cup milk

  6. 2 large eggs

  7. 1/2 cup pure maple syrup

  8. 2 tablespoons vegetable oil

  9. 1/4 cup preserves or jam

  1. Preheat oven to 450°F (230°C).

  2. In a large bowl mix together oat bran, raisins, baking powder and salt. Set aside.

  3. Combine milk, eggs, maple syrup and oil in a separate bowl and mix well. Pour into dry ingredients and stir until just moistened. Fill oiled muffin tins (or cupcake papers) one-third full, add a teaspoon of jam, then fill to two-thirds full.

  4. Bake 12 to 15 minutes or until done or until a toothpick comes out clean when inserted in the center. Remove from oven and let cool on a wire rack.
